Byrek

Easy, a bomb of vitamins, very low in fat, you can eat as much as you feel to 😉

1. Ingredients:

  • 3 big pastry layers
  • 2 leeks
  • 3 onions
  • 5 garlic cloves
  • 100 gr red cabbage
  • Spices of your choice. Mine (black pepper, basil, cumin, oregano)
  • A bit of salt

2. Preparation:

Filling: in a non sticking pan we put a bit of water with a pinch of the mixed spices.

After this content starts to heat up we add the cut veggies one after the other by continuously mixing the content.

In order to preserve the taste of each ingredient and the vitamin collection that the colorful veggies have, a good practice is to cook low heat and to keep the pan covered for as long as possible (taught by a friend – a golden advice 🙂 ).

We keep cooking the veggies for as long as they become soft and the leek starts to release water. We season this content with the salt and the rest of the spices.

By the means of a kitchen paper roll we dye the baking pan with a very very (literally 🙂 ) small amount of oil.

We lay the first pastry layer, fill it with half of the content.

We proceed with a second pastry layer, fill it with the remaining of the filling content.

We cover the baking pan with the third pastry layer.

We bake this content in a preheated oven (230 degrees) as long as the pastry starts to get colored (circa 25 – 30 minutes.)

After the food is cooked, we remove the baking pan from the oven, sprinkle the byrek with a bit of water on top to soften it up and cover with a rag (piece of cloth)for 3-4 minutes.

Your delicious food is now ready to be cut and served.

3. Tips and conclusions: 

We are what we eat, I agree, but the story does not end up here. I believe we are more… we are how we treat food, how we eat, the attitude we have in the table, the communication we have with our body while feeding it.

Eat slowly, try to taste every single ingredient, concentrate on your meal, do not multitask while eating… a meal should be a precious time, to listen at your body, at your thoughts or share priceless thoughts and positive vibes if you’re eating with other people. Your body will very soon reward you for this. It will tell you when it’s full, what is it still missing, whether it is happy – yes indeed – did you ever feel like you’d explode of energy, you feel powerful, with an immense desire to move the waters, change something, with the necessity to sit and write down your thoughts because they are too many and perhaps totally unrelated, a crazy desire to dance right away – to any type of music, extremely happy, smiling, for no reason? I experienced this, in a different intensity, since I was a kid… somehow it faded away while growing up but I got it back, as soon as I became aware of every single substance that filled up my environment, being it food, a being, a feeling, information… I LOVE this feeling!

Listen at your body, enjoy your creation :-), eat as much as you feel without feeling bad because it’s a clean food and super healthy.
